Chicken Thighs are a dark meat cut from the upper section of the leg, between the breast and the drumstick. Owing to the presence of connective tissue, they are tougher than white meat when raw, but because of the higher fat content, they become particularly tender as the fat breaks down when cooking. They are generally considered the most flavorful cut of chicken.
