Preheat your oven to 425°F–450°F. Arrange the marrow bones cut-side up on a foil- or parchment-lined baking sheet and season generously with salt and pepper. Roast for 15–25 minutes, until the marrow is soft, bubbling, and just beginning to pull away from the bone. Be careful not to overcook—it should be tender, like warm butter. Serve immediately with a sprinkle of flaky sea salt, crusty bread, or a light, tangy salad.
