- 12 ounces penne pasta

1 pound Hot Italian sausage, sliced into coins
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 24 ounces of your favorite red pasta sauce
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish (optional)
Directions
- Cook the penne pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.
In a large skillet, cook the sliced Hot Italian sausage over medium heat until browned and cooked through. Remove the sausage from the skillet and set aside.
- In the same skillet, add the sliced red and yellow bell peppers, and onions. Cook until they are softened and slightly caramelized, about 8-10 minutes.
- Add the minced garlic to the skillet with the peppers and onions, and cook for another 1-2 minutes until fragrant.
Return the cooked Hot Italian sausage to the skillet with the peppers and onions. Pour in the red pasta sauce and stir to combine. Let the sauce simmer for a few minutes to heat through and meld the flavors. If the sauce is too thick, you can add some of the reserved pasta water to thin it out.
- Season the sauce with salt and pepper to taste.
- Add the cooked penne pasta to the skillet with the sausage and vegetables. Toss everything together until the pasta is well coated with the sauce.
- Serve the Penne with Sausage, Peppers, and Onions hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
