1 package Rastelli’s Pulled Pork

1 cup Fire-Roasted Sweet Corn

1 cup canned Black Beans, drained and rinsed

1 cup diced Tomatoes

1 ripe Avocado, sliced

1 cup shredded Colby Jack cheddar cheese

1 cup Sour Cream

2 tablespoons fresh Lime Juice

2 tablespoons chopped Fresh Cilantro
- Salt and pepper to taste
Lime Cilantro Sour Cream Sauce
Directions
In a small bowl, whisk together the sour cream, fresh lime juice, chopped cilantro, salt, and pepper until smooth. Adjust seasoning to taste. Set aside.
Warm the flour tortillas in a dry skillet or microwave until pliable. Heat the Rastelli's Pulled Pork according to package instructions. Place a portion of the heated pulled pork onto each tortilla, followed by the fire-roasted sweetcorn, black beans, diced tomatoes, sliced avocado, and shredded Colby Jack cheddar cheese.
Drizzle the lime cilantro sour cream sauce over the filling ingredients.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to enclose the filling. Place the burritos seam-side down on a plate or baking sheet.
