2 (10 oz) Rastelli's Ribeye Steaks

2 Tablespoon butter

1 red bell pepper

1 onion diced

3 cloves garlic crushed

8 oz cream cheese

½ cup sour cream

½ cup milk

Salt and pepper

4 oz provolone cheese grated, divided

4 oz Smoked Gouda

1 teaspoon of Hot Sauce

1 oz parmesan cheese finely grated
Directions
Preheat your oven to 425°F.
Heat butter in a large cast-iron skillet over high heat. Add diced bell pepper and onion, cooking for 2–3 minutes until they begin to soften, stir often.
Add chopped steak to the skillet and cook for 4–5 minutes, stirring regularly, until browned.
Lower the heat to medium-low. Stir in the crushed garlic and cook for 1 minute.
Add cream cheese, sour cream, milk, hot sauce, salt and pepper to taste. Stir constantly until the mixture is smooth and creamy. Remove from heat.
Add Cheese: Mix in the Smoked Gouda, ¾ of the Provolone and Parmesan cheese, saving the rest for the topping.
Spread the mixture evenly in the skillet, sprinkle the remaining cheese on top, and bake uncovered for 15 minutes, or until hot and golden.
