Ingredients
- 1 lb flaky cod fillets, cooked and flaked
- 2 cups mashed potatoes
- 1/4 cup fresh herbs (such as parsley, chives, and dill), finely chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- 1/2 cup mayonnaise
- 2 tablespoons chopped fresh tarragon
- 2 tablespoons chopped gherkins
- 1 tablespoon prepared horseradish
- 1 teaspoon lemon juice
- Salt and pepper to taste
For the Tarragon-Gherkin Horseradish Dipping Sauce
Directions
In a large mixing bowl, combine the flaked cod, mashed potatoes, chopped fresh herbs, garlic powder, salt, and pepper. Mix until well combined.
Take a portion of the cod mixture and shape it into small cylindrical croquettes. Dip each croquette into the beaten eggs, then coat it evenly with breadcrumbs, pressing gently to adhere.
Heat vegetable oil in a large skillet over medium heat. Fry the coated croquettes in batches until golden brown and crispy on all sides, about 3-4 minutes per side. Drain on paper towels to remove excess oil.
In a small bowl, mix together mayonnaise, chopped tarragon, chopped gherkins, prepared horseradish, lemon juice, salt, and pepper until well combined.
Arrange the crispy Cod Croquettes on a serving platter. Serve hot, accompanied by the tarragon-gherkin horseradish dipping sauce on the side.
