2 Faroe Islands Salmon Filets

¾ cup Barbecue Sauce

½ cup Apricot Preserves

Directions
Soak wooden toothpicks in water for 10 minutes. In a small bowl, combine barbecue and preserves; mix well. Reserve ¼ cup for dipping.
Preheat oven to 425. Cut bacon slices in half. Wrap bacon around salmon, securing with toothpicks; place on a lightly greased rack in a broiler pan. Brush the salmon with a ½ cup of sauce.
Bake salmon for 15 – 20 minutes until cooked through and bacon is crisp. Then serve with reserved sauce.
